Quinoa Stuffed Sweet Potatoes 👌🏻 Sorry for yet another sweet potato recipe 🤷🏼♀️ I just love how affordable and versatile they are so I use them all the time. Made one of my favorite plant based meals tonight. Super easy and super tasty! Loaded with mashed avocado + salsa. -
Doesn’t get better than this, unless I mean it’s Chipotle that’s definitely better 😜 But this is a great, easy, plant based dinner that isn’t super expensive. Preheat oven to 400F
Add 3 medium sweet potatoes to a pan and bake for an 45-60 minutes depending on the size. You want them to be soft and slightly caramelized.
While the sweet potatoes cook, make your quinoa according to the package instructions. To save time, you could make this ahead of time!
Heat a skillet over medium heat, add a little oil, then add:
1 onion diced + 1 pepper diced. Sprinkle with 1 tsp taco seasoning (I like @primalpalate ) Sautéed for 4-5 minutes. Then add in cooked 1 1/2 cup cooked quinoa, 1/2 cup black beans, 1/2 cup corn, 1/2 cup salsa, 2 tsp taco seasoning, 1 tsp chili powder. Mix it all together and let it cook for 5-7 minutes.
When the sweet potatoes are done, slice in half, kind of mush the sweet potato down a little, load up with the quinoa mixture. Add some avocado if you want (you do 😉) Enjoy!! We’ve got 1 sweet potato leftover 👌🏻 #glutenfree#plantbased#choosingbalance ...
