cheeeezy hummus sawce & roasted potatoes. ummm, 100% count me in! i roasted the potatoes in extra virgin olive oil at 400 degrees for about 25 min. for the sauce, blend one can of chickpeas, 2 tbsp vegan sour cream or cheese, 1/4 tsp onion powder, 1/4 tsp sea salt, 1 tbsp nutritional yeast and 1/4 tsp paprika. enjoy✨.

What you need:
Crust: 2 1/2 cups whole wheat flour, 1/2 tsp salt, 1/4 cup refined coconut oil, 1/2-1 cup warm water filling: 2 cups raw walnut halves, 2 tbl taco seasoning, 2 tbl red wine vinegar, 1 tbl tamari, 1 cup thawed frozen corn, 1 cup black beans from can drained/rinsed, 1 tbl vegan Worcestershire sauce, 1/4 cup chopped cilantro What you do: 
1️⃣In a food processor, Combine flour & salt, add coconut oil, keep pulsing, scraping down sides to combine, slowly add water 1 tbl at a time, process on high, when combined it will form a ball & feel smooth. Cut dough in 4 equal pieces, wrap in a kitchen towel, let rest 30min
2️⃣ Using your food processor again, pulse walnuts till crumbly & looks meaty with 1tbl taco seasoning,1 tbl red wine vinegar, 1/2 tbl tamari, 1/2 tsp salt, black pepper to taste
3️⃣In large sauté pan, over med/high heat, heat neutral oil, , add corn, black beans, the rest of seasoning/ vinegar, salt/pepper to taste, mix until heated through 
4️⃣ Add walnut meat to pan, mix, add Worcestershire sauce. Season with salt pepper to taste. Let Cool.
5️⃣ On a floured dusted surface roll out one piece of the sectioned dough, use a 6 in circular cutter to make empanada crust (I used a bowl as my template), place 1/4 cup packed filling & some cilantro, on 1/2 of the dough leaving a boarder, dab boarder with water on edges of half the circle, fold into a half moon, use tines of fork to seal firmly, repeat until you use all dough, place on parchment paper. Repeat. You should get 2 empanadas from each piece of dough. Making a total of 8.
6️⃣ Mist parchment with oil bake empanadas at 400 F 20-25 flipping half way through misting tops with oil. Serve with all your favorite taco toppings- quac, salsa & sour cream..

Recipe 👇
400 g Enoki mushrooms⁣
150 g tempura flour (egg-free)⁣
200 ml iced water⁣
1/2 tsp sweet paprika powder ⁣
1/2 tsp garlic powder⁣
Vegetable oil for frying ⁣
Spicy mayo:⁣
3 tbsp vegan mayonnaise ⁣
2-3 tsp hot Sriracha sauce⁣
Garnish:⁣
1 green onion, finely chopped⁣
Method:⁣
- In a medium sized mixing bowl, whisky together tempura flour, water, paprika powder and garlic powder until smooth.⁣
- Cut off the bottom part of the Enoki mushrooms and separate them into smaller bunches.⁣
- Pick up the bunches on at a time with chopsticks and dip in the tempura mixture, let excess mixture drip off then fry in hot oil until golden. Fry in small batches so the Enoki mushrooms don’t stick together.⁣
- When golden, place the mushrooms on paper towel to let excess oil drip off.⁣
- Mix ingredients for the spicy mayo in a small bowl and serve the Enoki mushrooms with a sprinkle of green onions immediately while hot.

🌱😍 Veggie Mac n Cheeze Chowder! 📷 by @thevegansara 🚨🚨Recipe: 8 oz cooked macaroni ( or your favorite small pasta shape) For the Cashew Cream: 1/2 cup cashews, 1 cup veggie broth, 1/4 cup jarred red peppers chopped, 3 tbl nutritional yeast For The Soup:1/4 cup vegan butter, 1 onion finely chopped, 1/4 cup flour, 2 tsp Dijon mustard, 3 cups veggie broth, 2 cups broccoli florets finely chopped, 2 celery stalks chopped, 1 large carrot peeled & finely chopped, 1 1/2 cup non dairy milk (I used soy), 1 tbls white vinegar, salt/pepper to taste

What you do:
1️⃣ In a high speed blender combine cashew cream ingredients & mix on high till smooth. Set aside
2️⃣ In a large pot, melt butter on med heat, add onions and sauté till translucent about 5 minutes
3️⃣ Add mustard, mix, then slowly whisk in flour, over med heat for about 2 minutes
4️⃣Add broth & veggies, bring to a boil, then simmer 20-25 min till veggies are tender
5️⃣ Add non dairy milk, cashew cream, & vinegar. Adjust seasonings.
6️⃣ Fill bowl with desired amount of macaroni & add chowder. Enjoy!

So happy to wander around and buy a fabulous selection of locally seasonally grown fruits and vegetables that will be used during the next week. I am not able to get all the herbs and salad in the photo but I think you can get the idea of the fabulous selection on offer at the farmers markets. Where ever you are in the world look out for your local farmers market and support your local community by buying seasonal fruit and vegetables. You create a smaller foot print on our fragile planet by buying locally and by buying seasonally the food is full of nutrients and it’s aroma and flavour is its peak ! .

Chinese HOT & SOUR NOODLE SOUP

Love at first #slurp. 😍 😋 
I expected to like it, but I got more than that. Powerful bouquet of soups with bits of sweet  brought by bok choy and corn. The big surprise was the taste of topping, the fried soybeans. A very fine snack, it definitely goes on the snack list for binge-watching. .
